There are several things are possible to do in order to help keep the wine that you have opened fresher for longer. In the first place, you must ensure that you properly cork your wine. While the dry part of the cork could be more straightforward to put back to the bottle, it’s better to use the same cork that was inside the bottle prior to being opened. The dry part of the cork could be contaminated, and can cause a smear on the wine you’re trying to protect. While talking as well as tasting the wines at an event organized by Riedel’s VP of on-premise sales Anne Koziara, I learned some things about decanting old wines and, most importantly, how don’t do it.
